Oaza: Tell us something about the history of your pastry shop.
Enver: The pastry shop has been here since 1945. It was run by Ms. Rukavina, she was famous for her desserts. My brother Gadaf and I took over the business in 1989 and kept all the original recipes. Confectionery is our family business, our grandfather and father were also confectioners. We are the third generation of confectioners in our family.
Oaza: How long has the interior looked like it does today?
Enver: We redecorated about 24 years ago, so in the 90's, and it still looks like that today.
Oaza: Who are your customers?
Enver: 90% of our customers are regulars. They are mostly older people, some of them even from the time of Ms. Rukavina whose business we inherited and whose recipes we still follow today.
Oaza: What is your line of products?
Enver: We offer confectionary classics: donuts, tea biscuits, croissants, winter ice cream, ice cream. Certain products are seasonal: in the fall chesnut cakes, then winter ice cream, after February until the carnival we have donuts, and in the summer ice cream. We do not offer it all year round. We used to make cakes for weddings and caterers but we stopped due to bad experiences. We offer 14 dry varieties and 18 varieties with cream. However, when we add seasonal products, we also always take out the same number of products we add, in order to keep the balance, because when people have too many choices certain cakes do not sell.
